We couldn’t stop thinking about brown butter syrup after our first attempt. While the flavor was there, the texture… wasn’t. This time, we took a refined approach—adjusting the heat, tweaking the ratio, and dialing in the method to bring you one of the best coffee syrups we've ever tasted.
Why Brown Butter?
Brown butter has a deep, toasty, nutty flavor that makes a simple latte taste like something straight out of a craft café. This syrup doesn’t just sweeten—it elevates.
Ingredients:

1 stick unsalted butter (116g)

116g whole milk

116g granulated sugar
Note: This makes a thinner syrup than a traditional 1:1 simple, but with better emulsification and a more balanced texture.
Instructions:
1. Brown the Butter
In a saucepan over medium-low heat, melt the butter slowly, stirring frequently. Let it cook until it turns golden brown and smells nutty—watch carefully to avoid burning. Once browned, remove from heat immediately.
2. Combine Milk & Sugar
In a separate container, pre-mix the milk and sugar. Keep this mixture aside until the butter is fully browned.
Pro Tip: Keeping milk and sugar separate from the butter during browning prevents milk proteins from burning and allows better flavor development.
3. Mix It All Together
Slowly add the milk and sugar mixture into the browned butter while stirring. If any sugar clumps remain, stir gently over low heat until fully dissolved. Avoid boiling.
4. Strain & Cool
Strain out any solids and transfer the syrup to a bottle. Let it cool fully. We recommend storing it in the fridge.
